Cleaning manual burr grinder before first use by Scrofuloidin Coffee

[–]whatatravistee 1 point2 points ago

sorry, i just noticed that you are planning on upgrading to a manual burr grinder. for the most part, those are usually easily disassembled for you to clean directly if you need to- i don't think i've ever had to use grindz on my hario slim.

the rice method works (always use minute/instant rice because the processing method ensures that no moisture is left in the grain), but if you're not so keen on all the rice dust you can always go with urnex grindz, which although pricey is essentially fool-proof.

just in case you weren't aware, bodum does make replacement carafes for their french presses. make sure you buy another glass one though, because the polycarbonate replacements won't work with the normal plunger (they need ones with a silicone seal- the metal just scratches up the plastic).

Here's a few well-written brewing guides from Intelligentsia. by whatatravisteein Coffee

Pretty consistent with what I've seen baristas doing in the chicago stores, and their methods definitely deliver!

On a somewhat-related note: has anyone tried the new analog black cat espresso blend? I wanted to give it a try but I'm going to be separated from my espresso machine for a month over winter break (my machine is at school in my dorm).

TIL the Higgs boson was not meant to be nicknamed the God particle, but "The Goddamned Particle" by PartyRobin todayilearned

[–]whatatravistee 13 points14 points ago

From Lederman himself in his book, "The God Particle: If the Universe is the Answer, What is the Question?":

"I have give it a nickname: the God Particle. Why God Particle? Two reason. One, the publisher wouldn't let us call it the Goddamn Particle, though that might be a more appropriate title, given its villainous nature and the expense it is causing."

Having attended a high school he helped charter, I actually had lunch with Dr. Lederman one time and he mentioned how he wanted to title the book "The Goddamn Particle", but he really was just joking.

So, I modded my Gaggia MDF to be stepless, and I documented the process. [imgur guide] by LambTacoin Coffee

Seeing this gallery might just make me do the same for my MDF. I actually have one of the older versions of the MDF though, the ones with the metal bodies (i got a white one used off ebay for a very decent price). Have you ever considered attempting to do a doserless mod?

Hopefully not too much has changed, but I know for sure that the hopper is not secured by screws. I'll have to do some more hunting to sort this out.

this is what i run from my dorm room at university of illinois- it's the closest i'll get to running a coffeeshop before i retire.

i'm typically pulling intelli or metropolis coffee (hometown roasters!) but i also pull locally from columbia street roasters in champaign, il- great people if any r/coffee'rs out there are in the c-u should definitely hit them up.

How can i re-heat coffee without destroying flavor? by smoothcam72in Coffee

unfortunately, i don't think there is a good way to 'reheat' coffee, it's definitely a drink that is meant to be consumed fresh while still warm, ideally. the act of reheating brewed coffee, whatever the means, will change the chemistry of the extracted coffee- and regardless its probable that the volatile oils will have disappeared by the time you want to reheat coffee. not to say that reheated coffee can't be drunk, it just shouldn't :). As per espresso, shots themselves should be consumed right after pulling, but if you want to keep them hot longer you can add hot water and make an Americano, and store that in a thermos for extended consumption. Workable, but not a perfect solution.

it's always better to make in quantity as you drink it, but if your problem is keeping coffee warm for hours so that you can drink it later, the solution is probably to invest in a good thermos. This thermos is one that i've been using for a while, and it is fantastic at what it does. Brewed coffee will stay hot for 6-7 hours, and warm for another 12 or so (but hopefully you will have finished it by then haha).

intelligentsia for sure would be a good place to start. along with their basic barista course, you can also arrange private classes with them: http://www.intelligentsiacoffee.com/education/public-trainings

lol excellent use of 80/20. i agree, that stuff can be a pain if you don't have the right cutting tools, but your machine looks quite solid. nice work.

What would you guys suggest as the best way to make iced coffee in a dorm room? by duppasin Coffee

[–]whatatravistee 1 point2 points ago

sorry, this has been archived and can no longer be voted on

Although to be honest, i actually have a pretty legit espresso setup in my dorm room that i make ice coffee with, i think the cheapest and quickest way to do good iced coffee is probably Aeropress.

Here's a really good article on making good aeropress iced coffee (basically using double the amount of grinds shot directly into ice) that Coffeegeek put out recently. Enjoy, and let us know what you decide on!

Check out this thermos. I just picked up the .48 liter size and it is incredibly good at what it does (gotta love elephant brand stuff). its kind of pricey at $20, but just as a test, the coffee I made about 36 hours ago is still lukewarm in the thermos.

thanks! i've been shooting for a couple years now (film for a while actually), and went digital about two years ago. i shot that with a nikon d40 body and a 35mm f/1.8 prime, pretty much a bang-for-buck matchup.

i've got some stuff up on my website, and i might be putting up some brew shots in the next few days (check under the art gallery).

My school wants to start a barista station. Any ideas? by frabjous_jubjubin Coffee

agreed. semi-commercial-scale espresso on that budget is probably not too realistic, and another consideration is that most commercial espresso machines are line-plumbed with no in-machine water tank (though, I guess you could run a large tank on the cart and plumb it in). I have an espresso setup in my dorm room, and it's already enough of a hassle to have to go to walk down the hallway to access a sink (water tank and drip tray will last me a couple drinks).

but going with ajrichie, i think a fancy pourover/press/maybe even siphon would be a neat idea for a mobile cafe. you get quality coffee and on a much more realistic budget, giving you more room to explore roasters and beans.

Here's what I've got setup in my dorm room. Been using AeroPress + French Press for the past few years, but I finally made the jump this past summer and got a refurb Ascaso Steel Duo Professional for $350 in very decent condition. Found it on 1-st Line, where it sat in a staff tester's home for a year and was then returned. Grinder is the older metal-body Gaggia MDF grinder had for $150 off ebay. I'm from Chicago, so my roasters of choice are intelli and metropolis.

Bringing the cafe into my room has been pretty fantastic. Gives me a good reason to wake up for that 8am lecture.
