Camping & celebrating a friend's birthday over the holiday weekend - he requested these. Will finish with a chocolate ganache + shredded coconut (making at the campsite, brcause that's easier).

Currently, I've basted the cupcakes with a Spiced Dark Rum Simple Syrup three times each (to keep them moist until Saturday night).

Simple Syrup:

  • 3 oz Kraken Rum

  • 1/2 cup water

  • 3/4 cup sugar

  • 2 tbsp light corn syrup

the Cupcake recipe is here

  • I subbed the buttermilk w/ 1 cup whipped egg whites (soft peak)... well, it was 1 cup before I whipped them. Other than that, the recipe was unchanged.

Makes 18 cupcakes.

i saw a bourbon fruitcake recipe some years back - I dont remember it step-by-step, but it was along the lines of:

  • mix batter, add 1/2 cup bourbon, take one shot.

  • several steps later, mix a strong bourbon & coke drink

  • several steps after that, guzzle bourbon & throw away the fruitcake.
