You can't go wrong with 1-2-3. One week primary, two weeks secondary and 3 weeks bottling. I do that at minimum. You've also stumbled upon one of my favorite facets of homebrewing.

You get rewarded for procrastination! What an awesome hobby! Don't feel like racking? Don't! It'll be better! Not up to bottling? Don't! It'll be better.

I've never felt better about saying "I don't feel like doing that, I'll just put it off."

Not if it's sanitized properly and you have a way for air to safely escape. I don't see why it would be an issue.

I did the exact same thing. Besides RBWHAHB, the best advice I received was "don't give up". Just keep trying.

You can't drink an outstanding homebrew that you made if you don't make it.

In my experience that's a little overkill. I keep a thermometer in the same closet as my fermenters & carboys. I've never had a problem.

I brewed that exact kit and it came out fine. I warmed the smack pack to room temp, wort was 80 when I pitched and it fermented at 70. I don't have the OG here (I'm at work), but I'll update when I get home.

Is 2 years for developed countries? Since a significant percentage of the world's population is malnourished, perhaps they list 2 years mainly for countries with little or no options.

Florida here. We have the same issue. If we built a basement it would fill up with water in a couple of days. Fortunately for brewing, my wife keeps the AC pretty cold.
