Oh, I didn't realize you were still using it as a gasser also. I don't know if the pizza stone is a good idea then- if it heats too unevenly (from being too close to the flame for instance) it will shatter.

If you're just worried about sealing it for low-and-slow, I'd imagine you could use any kind of removable tape on the outside. I have a Big Green Egg that is normally sealed with a rope gasket, but the gasket breaks down eventually and starts to have gaps. When that has happened in the past I used painter's tape to seal it up. I would only use it for low temps though.

I'm not too sure what your setup looks like, but I'm guessing the holes you need to seal up are from the gas lines, drip pan, things like that? I use high temperature RTV silicone. You can find it in any auto parts store or Amazon etc. RTV silicones are incredibly inert; once it is set, and as long as you don't exceed the max temperature (unlikely), you won't have to worry about it contaminating anything. If they're big holes, you can patch over them with another piece of metal using the RTV as glue.

For heat distribution see if you can get a baking stone type material between your heat source and the cooking grid. Again its hard to make a specific recommendation without seeing your setup. I'm imagining a rectangular gas grill with the smoke coming in from the side. I would see if you can find a rectangular baking stone (pizza stone) a couple inches smaller than the inside of your gas grill, and butt it up against the side wall on the smoke inlet side. So you would have a U-shaped open channel around the outside for the smoke to come up. If you can't find a rectangular pizza stone, I would imagine (but I've never tried it) you could take a round one and score it & break it to shape. Maybe use a tile saw.

Lose the lighter fluid. Like, don't ever let a drop of it into your new grill. Most people use a chimney starter. I use a plumber's torch and light the charcoal directly in the grill. This can cause the lump to spark and spatter and fly into your eye, but it is more manly.

Go with lump charcoal over briquettes. There is a whole cult of lump charcoal snobbery, but really any lump charcoal > briquettes.

If possible with your grill, when you are done cooking, see if you can close off the air supply completely and let the fire go out. Then you can re-use the lump that's left. It always bothered me with briquettes on regular kettle grills that the briquettes were only half spent when I was done cooking and the other half of that energy was just wasted.

I have a Stoker, love it. I didn't know they were coming out with a wifi one, but for years I have just used a cheap wireless bridge to connect to my home network.

I use Amir Majidimehr's Stokerlog software to monitor & control the Stoker remotely.

You should definitely finish it with something to protect it from sun, rain, and BBQ byproducts. I have had the BGE cypress table for my large for 4.5 years. When I got it I stained it with Cabot Australian Timber Oil. I'm not a woodworking guy but when I got it I was told the advantage of that type of stain was that when it started to wear off, you could just clean and reapply without having to sand anything. That finish has worked fine for me.

The table itself, however, is not doing so well. I live in New England and I leave it outside year round, but it is covered when not in use. The slats are starting to warp and the whole table has a rickety feel to it. I am going to be moving in a month or so and I have to figure out what to do about the table.

For anybody else looking for BGE tables, there are lots of plans to make your own on sites like nakedwhiz.com. I might end up going that route.

When I lived in PA, the state government cable network had a show where they would tour different factories and things in the state. That was a great a show. It was, IIRC, an hour long with no interruptions and and the whole episode focused on one facility with somebody that worked there acting like a tour guide the whole time.

Coming from PCN Tours, How It's Made seems to gloss over way too many things. PCN Tours was really under-produced, with the tour guides trying to talk over machinery, and workers looking up from the line smiling at the camera and stuff, but all that made it more authentic. They had time to fill so there would just be extended cuts of somebody operating a press or grinding castings or sorting potato chips or whatever, and it was fascinating.

If you live in PA or can find these on Youtube or something, I recommend them.

I'm not buying it. These guys are good enough at math to not be buying lotto tickets. I'm assuming that the "real" winner wishes to remain anonymous (doesn't want to give half to the ex-, illegal alien, or just doesn't want the attention) and used this firm to set up a trust or else just sold the ticket to them.

On my Big Green Egg I used a Rutland gasket and adhered it with Permatex ultra copper. This is a popular combination in Big Green Egg land. Many use 3m Super 77 spray adhesive instead of the Permatex.

The BGE is ceramic, not metal, but I don't see any reason why it shouldn't work. As with sticking anything to any surface, the most important thing is that the surface is clean.

Traffic on I-84 (Southbury) is nothing compared to I-95 (along the shoreline).

Like any city, Bridgeport has some nice neighborhoods, but yes, it sucks. You won't find much occasion to go there. There is an annual music festival there that you might be interested in. You just missed it.

You will find everything to be more expensive in CT. I spent a week training in Lincoln NE once and I could not believe how cheap the meals and everything else was. It was almost unbelievable how cheap it was. You will experience the opposite.

To satisfy your metropolitan needs you can catch a Metro North train from Danbury or Waterbury into Manhattan. It would be about a 2.5 hour trip and involve a transfer. Or you can drive there in < 2 hours. Boston is 3 hours away.

I wouldn't worry too much about being looked at as a hick. It might be different if you were moving to Greenwich or Darien or something. In Southbury nobody will care.

It's really just a matter of getting used to setting the vents. To start mine I open the bottom vent completely and take the daisy wheel off. Then I let the temperature overshoot my target temp by 100-150°F, then close up the vents to about where I "know" they need to be. The temperature will drop fairly quickly for a "new" fire. But if you let it "soak" at a higher temperature for a while, it takes forever to come back down.

For long low-and-slow or overnight cooks, I have a BBQ Stoker. I love it, and it has all sorts of network functionality so you can control it remotely, have it send updates to SMS / twitter etc.

In Big Green Egg land we call these Atomic Buffalo Turds (ABT's) and stuff a Lit'l Smoky or a cocktail weiner into the jalapenos also. I usually dust with BBQ rub or coarse sugar before grilling for a little sweetness.

Yes, it's a tensile stress fracture pattern. Where a crack occurs, the stress is relieved in the perpendicular direction. So along the edges of the crack, the stress is only in the parallel direction so new cracks always form at right angles.

Do they still close super early? I stopped going there because every time I did, they were closed.

Also, if you like to grill your own hot dogs, I suggest the natural casing franks from Ferraro's in New Haven.
