That's exactly what the artist did. To make the 'shopped image appear like a hand painting, you have to add flaws to it. The problem is he didn't add enough flaws.

The goose liver is foie gras, and the geese are not kept like that on the foie gras farms. The geese in that pic are already dead, and are hung like that for processing.

Sorry, I think you're screwed. Many times the newer effects in Illustrator aren't backwards compatible, which is why the newer versions always give you an option to save your work so it can be read by earlier versions.
