This is not jerky. I am from Canada so let me explain.

You go out in the woods with some kind of firearm. You find a creature that weighs more than you. After applying for, paying and approving all licences (lol Canada) for killing this majestic creature, you pop pop him (or her).

After carving all the meat up, and dragging it back to your pickup truck with attached crane winch, share a few brews with your friends, and drive home to hang your kill of a beam suspended between 2 trees, set up in your back yard. With a tarp hanging over it if you're in the pacific west. Have more beers to recover from all the hard work.

When you finally regain consciousness from the marathon beer run you had last night, you stumble out into the noon day sun, dressed in your finest flannel, and proceed to hack your kill up. lucky for you, night time in Canada is the best freezer in the world, so your meat is nice and fresh. Hell, you might even find a bear sniffing around it, thereby doubling the amount of jerky you can make. Bonus.

After cleaning, washing, draining and generally slicing the meat into thin, 5.08 centimeter pieces, you dump them in a barrel of salt, soya sauce and whatever the fuck else you want (garlic, onions, peppers, beer) and you let that motherfucker sit around for at least 3 days whal you get other shit done. Like logging and hockey.

Then, when you finally remember you have a barrel of meat sitting somewhere on your land, you take the pieces out and put them into an old fridge you converted into a smoker. Laying all of the pieces on racks, you add some hickory chips from a tree you cut down in your back yard into the cast iron pan at the bottom of the fridge, witch is sitting on a hot plate.

You turn that shit on, and let it roast for however long it takes you to remember you were making jerky, Add some more chips, sprinkle pepper, and let it sit for however long you think it needs.

Jerky making is an art, not a science, you need to do before you make.

And if I ever catch you using a dehydrator, which is a machine designed to dry out fucking fruit, I will send you a strongly worded letter.
