Cold butter and flour cut together into a firm dough, chilled, then rolled to ~3mm, pressed into a fluted pan, baked @ 160c for 18 minutes, then fill the pastry with a lovely fruit filling of your choice, then finish in the oven for 25 minutes to develop a lovely glaze... Don't forget the clotted cream when serving...
