Every time this thread comes up I recommend it, Prostitution and Vice. It's also an easy class (grade-wise). That isn't to say you won't learn much, you'll get an interesting perspective and many of the stories you hear will stick with you for years to come.

Intro to Multimedia (4002-320) is a fantastic class to take for a lot of very general knowledge about the Internet, multimedia, and web design. It's a pretty basic class, not a ton of work involved. It's got three projects, the third of which is just a more finished version of the second, and they're all pretty simple.

Basically, take this class if you're curious about learning the basics of web design - just picking up literacy in that field is a marketable skill out in the real world.

Okay well, I also recommend Beginning ASL 1. It's not all that hard a class, and ASL is a really damn interesting language. ASL 1 is a pretty good way to dip your foot in the language, and it counts as either an arts of expression or a communication elective. So hell, I just went with the ASL concentration, filled up my AoE and com electives with that, and now I have some more space for other random classes.

I loved Professional Selling and Human Resources Management. Yeah, business classes might not be your major but you should know how to sell things to people and know your rights as an employee.

I'm pretty sure HRM requires Org Behavior first. I never took Professional Selling, but I'd guess it requires Prin. of Marketing.

Glass. They have a survey course from 2-6, there's a $90 course fee but you get to keep all the stuff you make.

Alternatively metals or wood. Also has a course fee, but very fun and again you keep what you make.
